Italian Penne Bake

This is one of our family's favorite dishes--simple to make and even the veggies in it taste delicious. I promised to share the recipe and thought, why not make a blog entry out of it?

So you make about 2/3 of a box of penne (whole wheat if you're health-conscious)

and start frying up about 1 lb of Italian sausage. While that's going, cut some grape tomatoes in half and dice a green pepper. After the sausage is almost all the way browned, add the veggies and saute 6 minutes. You can also toss in some Italian spices, a dash of salt, and maybe even red pepper flakes if you like spicy. Then add about a half jar of your favorite pasta sauce. Simmer 5 minutes.

Add the cooked noodles, toss in a bag (or less) of mozzarella and about 4 oz. crumbled feta.

Sprinkle parmesan over the top and bake at 350 for 7 minutes.

It's easy!
